I've never sent a celebrity a birthday card, but I have participated in fannish fundraisers on the occasion of their birthday to their respective favorite charities.
And IMHO that makes sense and is classy.

I know one. I read it in a teenybopper magazine when I was small, and I remembered it because it's the same day as mine.

I know offhand of three celebrities who share my birthday: Gwen Verdon, Charles Nelson Reilly, and Orlando Bloom. I'm pretty tickled by the first two. *g*
Haven't sent anyone a birthday card, but I have wished them 'Happy Birthday' in my journal, not that I expected them to ever read that.
The Internet really does change things. It occurs to me that, oh, there are all these random celebs I've occasionally Twittered with, I suppose I might say something in that environment, yeah. huh.
Do fictional characters count? It's hard not to know Ianto Jones' birthday in Torchwood fandom.

it seems like i have always known that my birthday falls right around paul mccartney and john taylor's birthdays, always.
I ticked 'you or someone close shares a birthday' but it would be more accurate to say that I remembered the date because the date shared with a memorable date for me personally, which was not a birthday. But the reason for retention was the same -- familiar date already.
I don't think I know the birthdays of any of the celebs I'm currently interested. However, I can still tell you all of the Hanson brothers' and Spice Girls' bdays.

not only do i share a birthday with john lithgow, we also have the same middle name. of course, he's a few years older than me.
i know few other celeb's b'days, like john lennon, the birthdays of the band rush. mostly, i know my 'birthday twins' - random folks i've met that share my birthday. there's at least a dozen at last count. a few of them are local celebrities where they live - musicians, poets, scholars. but nothing on the scale you're looking at, i think.

I'm am RPF writer with a very, very large cast of people (it's got to be 50+ people at this point) that I'm "responsible" for (two person project) so that's why!

I study astrology and sample charts in astrology books are generally of famous folks. And once people's astrological info gets crammed into my brain, it's there forever.
The only celeb birthday I can remember with any consistency (other than Elvis's and Bowie's) is JK Rowling's. Granted, I can't remember when the heck my family members were born most of the time, so I am rather bad with birthdays in general.

I think I know the birthdays of more fictional people than celebrities.
I certainly do. Granted, they're mostly fictional people of my own invention, but still...
I know maybe two. And they were all ones I learned when I was about 13, and they just happen to have stuck around. I just really don't care. It's never been a thing for me, and I don't really understand the interest.
None... I already find remembering my own birthday somewhat challenging, though. ";-]
do "happy birthday!" tweets count as cards? because I did one of those this morning. though I have actually sent a celebrity a birthday card, too. (as part of a larger "being encouraging and supportive of you making a new record" care package. I don't know if that's better or worse, or if that they had specifically asked their fans to send them random crap is a mitigating factor.)
