But right now you are shifting a whole lot of things, and a mistake could be really frustrating. Give it another week or two, and then start dealing with that sort of problem.
We have another friend who is just intolerant and she can eat some things which have small amounts of wheat in them. She just has to make sure it's incedental.
The risk is low. There is no raw flour there, as the two gluten containing items (soft taco shell, and burrito shell) are sent to stores packaged. As long as fresh gloves are used, I'm supposed to be safe.
