So should I risk Chipotle? I know as long as I don't get burrito or soft taco it's safe, but I'm all cross-contamination paranoid.

The risk is low. There is no raw flour there, as the two gluten containing items (soft taco shell, and burrito shell) are sent to stores packaged. As long as fresh gloves are used, I'm supposed to be safe.

Are you really craving it? Sometimes I can eat triggery foods if I am archetypally craving them. Your body just figures out what to do with them.

And if gloves are the only worry, I think you will be fine. However you should leave some window if possible for the unexpected.

Mostly, I'd wait a couple of weeks.

Michael (the aforementioned celiac person I know)(btw, is it celiac, or just gluten reactions... the latter is much easier to deal with) eats at mexican resaurants.

But right now you are shifting a whole lot of things, and a mistake could be really frustrating. Give it another week or two, and then start dealing with that sort of problem.

We have another friend who is just intolerant and she can eat some things which have small amounts of wheat in them. She just has to make sure it's incedental.

I've never had a problem with the hard tacos at Chipotle.
